Mozaic Beachclub Debuts Casual Bali Beachside Dining

Mozaic Beachclub officially debuts its new brand with the launch of the ‘Today, Mozaic Beachclub’ ad campaign, introducing its smart casual dining concept at beautiful Pantai Batubelig (Batubelig Beach) in the Seminyak neighborhood of holiday hotspot Bali.

The 3,200 sqm beachside restaurant – known as the ‘wild child’ of the venerable, award-winning Mozaic Beachclub brand – creates a different type of excitement for foodies with multiple dining spaces and “sipping cocktail” lounge areas. The legendary Mozaic Beachclub brand was recently named one of San Pellegrino World’s 50 Best Restaurants – Asia 2013 (the only restaurant in Indonesia to receive the distinction). It is also number five on Miele Guide’s top Asian restaurants for 2013, and is the second of only two restaurants in South East Asia to be recognized as a member of Les Grand Tables Du Monde.

And today, the newest member to the Mozaic Beachclub family of F&B brands welcomes a more spirited crowd, with a new menu in a modern but relaxed setting, to play all day on the pool deck and at night to savor an à la carte menu in the dining space – a menu that will constantly change with new dishes inspired by each day.

“While our commitment to the Mozaic Beachclub brand’s philosophy of using quality, local ingredients to create innovative flavors hasn’t changed, our new beachside brand is about to,” said James Ephraim, co-owner and chef of Mozaic Beachclub. “We welcome leisure travelers and local residents to breezier fare, full of distinctive flavors in a vibrant atmosphere.”

The UK-born Chef Ephraim started his career as a sous-chef with the highly-praised Grosvenor Hotel, catering exclusive events with regular appearances at the Estate of the Duke of Westminster. He ventured half way across the world to another island nation to open Bracu Restaurant in New Zealand as chef de cuisine, before transitioning to helm various restaurant establishments. He now continues the legacy created at the Ubud flagship by Co-owner and Chef Chris Salans.

“My original vision for Mozaic Beachclub Restaurant Gastronomique in Ubud will stay true and continue to serve its signature set tasting menus, but James and I wanted to create a different experience full of surprises for guests at the new restaurant,” says Chef Salans, the brainchild behind the Mozaic Beachclub brands. “After working with James for four years in Ubud, the time was right to branch out into a new beachside concept.”

Chef Ephraim helms an all-star team of Indonesian and Singaporean chefs in what he calls his ‘dream kitchen’ – an open-design concept in the backdrop of the dining space that lends even more drama to a theatre-ready scene – preparing modern French cuisine infused with Balinese flavors, visually savored even before it reaches the table. Comprised of in- and outdoor spaces, Mozaic Beachclub’s dining areas can cater to more than 140 guests at any time in this multi-faceted venue.

Mozaic Beachclub’s design is committed to the destination, with Bali’s island-inspired motifs creating a seductive ambience night and day. Covered walks flank a dramatic entryway, while energy-inspired water surrounds ceramic urns, setting the stage for what is about to come.

On the beachside level, an airily-designed bar lounge in tones of white and seablue offsets the outdoor lounge pool and a sundeck where gazebo daybeds surround the 4.5 x 23 meter pool. From the beachside-level dining area up to a more intimate level, the space continues with expansive views of the sandy beach and sunset horizon beyond. Warm, softly flattering light romances evening’s dusk and night’s darkness, and highlights traditional textiles and Balinese heritage woodcarvings. Polished charcoal concrete establishes linear, geometric furnishings and high ceilings that are borne into the sky by tall pillars.

Food and design begin – but do not complete – the Mozaic Beachclub revolution. The new concept hosts music events, special-occasion gatherings and group functions. With a future expected seating capacity upwards of 200 people, the soon-to-be-opened third-floor rooftop will be a destination for listening to music, entertaining friends, or simple romantic stargazing. The entire restaurant space can be divided into separate areas as befitting an individual group’s requirements; including a private air-conditioned dining room that seats 20 guests.

Come for the cuisine, the space, the attentive staff and the beachside restaurant setting – inviting guests to gather, play, laugh – and eat.

Honeymoon Destinations for December

Up north, the weather’s likely to be cold and wet (go high altitude or latitude to swap rain for more-fun snow) - plan the perfect honeymoon with this guide from Unique Honeymoons.

But there's Christmas magic to temper the chill, as festive markets dot Europe, and some North American cities. Sun-seekers rejoice: the Caribbean emerges from hurricane season. The southern hemisphere is hot, hot, hot - head to Oz and NZ for sun and surf - while Asia's a dry delight.

Nicknamed the 'Nature Island', lush and rugged Dominica is ideal for couples wanting the Caribbean with an authentic edge. Free from mass development, the island has secluded - mainly black-sand - beaches and small, intimate hotels (try Silks, a 17th-century rum distillery-turned jungle hideaway; It's also home to the region's first long-distance trek: the 180km Waitukubuli Trail. The wet hurricane season's just finished, so forests and volcanic hillsides are in full bloom; rivers and waterfalls are gushing at full flow. Rent a car to drive between coastal villages and the wild interior. Don't miss the hike via sulphur springs to Boiling Lake (a huge steaming fumarole) or a romantic dip in Emerald Pool, an enchanted grotto deep in the rainforest.

Kerala, India

Clear skies and warm breezes dominate November-April in 'God's Own Country'. Mix coconut-strewn palm beaches (where you'll find luxury lodges) with tranquil backwaters, best seen from a traditional rice barge. Also, take an elephant safari in Periyar Tiger Reserve and watch the sun set on the Chinese fishing nets at Cochin.

This honeymoon favourite - thanks to palm-swayed beaches, turquoise water, temples and tasty dishes - is mostly ideal November-February: the northern jungles of Chiang Mai are cool for elephant trekking; Bangkok's hot but not too humid; and the south-west coast - Phuket, Ko Phi Phi - is dry (though Samui might get rain).

Christmas markets, Europe

Think crisp nights, sparkly lights and warming mulled wine, sipped as you meander a fairytale of stalls plying baked goodies. Christmas markets spring up all over Europe from late Nov: try Prague and Tallinn for cheaper treats; Stockholm and Copenhagen for Scandi style; and Bath and Edinburgh for UK breaks.

The dryverano (summer) - from December to March - is the best time to be in exciting Colombia, for weather and festival fun. The walled city of Cartagena is the jewel in the crown, and an excellent base for exploring the Caribbean coast.

Las Vegas, USA

Add more bling to proceedings in the capital of glitz. Winter temps can dip to 4°C - but the atmosphere is sizzling 24/7, especially with all those Christmas lights. Catch a show, win big in a casino or take in the nearby natural wonders with a helicopter ride over the Grand Canyon.

Wine Wisdom from Small Luxury Hotels of the World

It’s possible to trace the earliest production of wine back to 6000 BC in Georgia. Since then the fermented grape invention has gone through many journeys including complete banishment during several periods of prohibition that touched most continents including APAC, Europe and America. Fortunately its departure was never for long and wine is thoroughly enjoyed globally today. With over 520 hotels around the world, Small Luxury Hotels of the World™ (SLH) takes pride in the many epicurean experiences we offer across our portfolio. We have rounded up a list for wine aficionados including: the most extraordinary wine offerings from one-of-a-kind cellars, spa treatments incorporating grapes, the opportunity to meet hoteliers turned sommeliers and introducing some of the rarest and most expensive, bottles. Cheers!

Skeletons in the Closet

The storied history of properties and what their wine cellars were used for at one point…
  • Woodbridge on the Derwent – Tasmania, Australia
Built as a grand house for the magistrate on the banks of the Derwent River in 1825, Woodbridge was one of the earliest structures in Australia. The location was ideal for ships sailing up the river to drop anchor and unload their cargo of goods and people, including prisoners. The convict jail under the house has since been converted into a welcoming wine cellar where guests are invited to browse the cellar and to taste a variety of Australian wines.
  • Cour des Loges – Lyon, France
According to legend, during the second half of the 19th century, the wine cellar at Cour Des Loges was the laboratory of the famous thaumaturge, Philippe de Lyon. He used the room to store his medicines and salves. Years later small bottles and little boxes were found before the cellar was converted into a wine cellar in the early 90s. The cellar was used as a plenary hall for the Masonic lodge, where each member would store their bottles in individual lockers, which still exist.
  • Hotel Haven – Helsinki, Finland
Hotel Haven, G. W. Sundmans restaurant is housed in an early 19th-century Empire home adjacent to the hotel with a wine cellar that over the years has served many purposes. The vaulted wine cellar is situated in a room that was used as the old coal cellar for the residential home. In the late 80s and the beginning of the 90s it was a dance floor for a night club until it was rebuilt as a wine cellar that houses an impressive collection of over 2,000 bottles of wine.

Wines is Not Just for Drinking

Using wine to create intoxicating experiences for the senses…

  • Entre Cielos – Mendoza, Argentina
Entre Cielos is home to the first authentic hammam in Latin America. The signature wine treatments invite guests to experience the magic of grapes and harness the revitalizing qualities of the vine with grape based treatments in Argentina´s leading wine producing region. Treatments, such as Bacchus offers the hammam circuit with full body exfoliation using grape seed, a wine bath with grape extracts, vitamins and minerals and nourishing grape extract facials. The Beneath the Grapes experience combines the use of wine not only in the bath treatments and massages, but finishes with a glass of the beloved concoction and light snacks.
  • Thalatta Seaside Hotel – Evia, Greece
The Spa at the Thalatta Seaside features Vinotherapy (wine therapy), which originated from Ancient Greek and Roman cultures. Combining the science of fytocosmetic and tradition, Syrah Grape Therapy is a unique beauty treatment and highly effective as the syrah grape extracts help protect the skin. Suitable for all skin types, the results are immediate and visible from the first session and makes for an ideal anti-aging therapy.
  • The Marmara Bodrum – Bodrum, Turkey
The Marmara Bodrum Spa’s Wine Massage applies consumable white wine to the body for 70 minutes. At the end of the massage, a special glass of wine is offered to each guest. The full-body Wine Massage begins with a special wine peel followed by a full-body wine mud soak and cleanse. The Marmara Bodrum Spa’s exclusive Wine Massages use pure, concentrated wine formula with an aim to harness the antioxidant agents to their full potential to benefit the body.

Coveted Bottles for the Connoisseur

For the most discerning palate…

  • Lainston House Hotel – Winchester, United Kingdom
Wine cellars are also known to house other things, as is the case at this 17th century country manor house that proudly offers its guests a collection of rare Grand Champagne Cognac’s dating back to 1809 and priced at USD20, 271. However, if you are looking for something a little younger, an 1893 E. Normandin is also available for USD2,300.
  • Brandenburger Hof Berlin – Berlin, Germany
Resembling a townhouse on a quiet street in central Berlin, many do not realize that this building is home to a 72-room hotel. What else they probably do not realize is that the hotel’s restaurant, DIE QUADRIGA, has one of only three remaining bottles of an 1897 Steinberger Riesling Cabinet. Curious to see what more than a century tastes like? Priced at USD19,500.

Hoteliers who are Hooked on Grapes

These renaissance men and women do it all…

  • The Levin – London, England
David and Lynne Levin have not only shared their last name with The Levin Hotel in Knightsbridge, London but also their winery, Levin Wines located in the Loire Valley France. What was once a dream—the ability to produce wine to serve to their guests—has now become reality. The organically grown Sauvignon Blanc and Gamay varieties are suitably named Mister L and Madame L, respectively. The Levin’s have even more cause for celebration; they were awarded 2 Gold Medals in the World Sauvignon Blanc Competition held in Blois, France just this week!
  • Villa Spalletti Trivelli – Rome, Italy
The Spalletti Trivelli family has had a life-long passion for wine that was passed down from their ancestors over the years. Produced in Umbria at the farm and vineyard of the Count and Countess Spalletti Trivelli, are two wines referred to as, “Sariano” and “Arale”. The area is known for the quality of their grapes and the old Sangiovese plants are used for the production of Sariano, while white grapes Trebbiano and Malvasia give life to Arale. The hotel will arrange a visit to the family’s vineyards (an hour’s drive from the property) to experience the flavours of a typical trattoria and view the wine-making process.

Unique by Design
  • Baros Maldives - Male, Maldives
Housing over 500 bottles, Baros Maldives’ glass-paneled, walk-in wine cellar hovers over a crystal-blue lagoon, also referred to as the Indian Ocean. The careful design features special panes to guarantee the quality of the wines even when exposed to direct sunshine so that the corking experience is never comprised.
  • Schwarzer Adler Estate Hotel- Vogtsburg - Oberbergen, Germany
This 14-room hotel is part of a 3rd generation family-owned wine estate that stores its bottles in mountain cellars. Guests can tour one or all three of the tunnels that have been carved up to 110 meters into the surrounding mountains in order to create these extraordinary wine cellars. The thick stone ensures that all bottles remain at a constant temperature of 12 degrees Celsius year-round.

Absolute Luxury at The Absolute Suite! Cape Panwa Hotel Launches New Luxury Penthouse Suite

With a private spa room, an infinity pool and your own chef on-hand to whip up whatever you fancy, Cape Panwa Hotel’s new Absolute Suite offers the ultimate in luxury.

Located on the quiet south-eastern point of Phuket in Thailand, Cape Panwa Hotel, part of the prestigious Cape Hotel Collection, offers guests both luxury and privacy with the launch of its new Absolute Suite. The two-bedroom, two-bathroom sprawling glass-encased penthouse offers awe-inspiring 360 degree views across the beautiful Andaman Sea, allowing guests to feel a world away from home.

Cape Panwa Hotel, which has hosted celebrities and VIPs including Leonardo di Caprio, is attractive to both couples and families with a range of accommodation, including large suites and pool villas and the three-bedroom Panwa Lodge. The new Absolute Suite has its own private elevator and a separate spa giving guests complete privacy from the rest of the hotel, yet is still able to take advantage of the eleven restaurants and bars and the hotel’s three hundred metre private beach. The Absolute Suite’s other privileges include use of a Mercedes-Benz during the stay, personal butlers and access to the hotel’s yacht, for that true VIP experience.

Founded in 1987, Cape Panwa Hotel recently completed a full renovation, reducing the number of hotel rooms by converting them into suites, including The Absolute Suite, bringing the hotel to a much higher standard.

Commenting on the hotel’s addition of The Absolute Suite, Director of Kasemkij Hotels Group, Tirawan Pangsrivongse said: “Phuket has always been one of the world’s most desirable places, many celebrities and VIPs have headed to the island over the years.

Cape Panwa Hotel is tucked away on a hillside with an exclusive beach, so it already offers privacy to guests. But The Absolute Suite gives guests a new level of privacy. We’ve included an array of exclusive privileges for Absolute Suite guests, but we’ve still kept it at a reasonable rate so that you don’t have to be a movie star to afford it. It is a world-class addition to the rest of the hotel accommodation.”

Prices for The Absolute Suite start at THB 35,000 (approx AU$1,150*) a night, with complimentary sparkling wine, afternoon canapés and private in-suite breakfast by a personal chef. Other accommodation starts from THB 3,500 (approx AU$115*).

A Tailor-Made Honeymoon in Vietnam

Honeymoon with a tailor made holiday in Vietnam from Responsible Travel.

This fantastic journey through Vietnam begins in the North, where you will land in the charming city of Hanoi - your first stop. Spend a couple of nights here exploring the Old Quarter, wandering around the Hoan Kiem Lake and visiting the many sights of the city. Next you will take the overnight train up to the Tonkinese Alps, arriving in the small town of Lao Cai early the following morning and spending a few days trekking and exploring the minority villages and colourful markets around Sapa. After returning to Hanoi you will head out to the UNESCO World Heritage Site of Halong Bay, where spending a night on board a traditional junk is the ideal way to see this stunning area in style and comfort.

Moving onto Central Vietnam spend two nights in the old Imperial city of Hue, visiting the Emperors Tombs set on the Perfume River and explore the old Citadel with its stunning architecture and intriguing history. Hoi An is the next stop, a charming old town with streets bustling with tailors, fine restaurants and a pretty stretch of beach just ten minutes out of town for your relaxation. Finally your last couple of nights will be in Saigon, a buzzing thriving city teeming with people and mopeds, as well as many interesting sights such as the infamous Cu Chi Tunnels. A great place to end your trip and pick up any last minute shopping before flying back to the UK. Best time to travel There is no best time of year to do this itinerary due to the varied and somewhat unreliable weather patterns spanning the country. Notoriously difficult to predict with any accuracy due to the several micro climates and the conflicting monsoon patterns that affect the weather, Vietnam has become even more unreliable in recent years as a result of global warming. The winter months of 2007/08 were especially harsh, with some of the worst weather in the region for over 40 years. Historically speaking, the north, the south and the central regions all have different weather patterns. The north and south are generally wet and hot and humid in our summer months, with the central region being hot and dry then. In our winter months the central region is monsoonal, experiencing strong typhoons on occasions. At this time the north will be cold and possibly some slight rain, while the south will be warm and dry.

For this itinerary therefore, if you were to travel in January/February for example, you are likely to experience some fairly cool temperatures in Sapa, Hanoi and Central regions, mist and cloud on Halong Bay, yet Saigon will be hot and dry. Travelling in July/August you are likely to experience some rain in Sapa, Hanoi and Halong Bay, however temperatures will certainly be much warmer than in winter months, with beautiful hot and dry beach weather in the Central regions, and some humid and wet spells in the South. Due to the three separate microclimates in Vietnam, it is virtually impossible to travel the full length of the country in any month of the year without experiencing some bad weather somewhere along the way. Once you have chosen when you would prefer to travel, the answer is to expect the unexpected in Vietnam.
